You want to use it as a sweetener to strong salty flavours.

Tips
This is the easiest thing ever. You just chop, mix and marinate overnight.
Please note, I suggest you sterilise the jar by simmering it in boiling water for 10 minutes. It will ensure that it will stay for longer in your cupboard.
The fun with this is to find the chillies that you like. I tried to go super hot with habanero chillies once, and it just overpowered the honey. Not just on heat, but flavour. Get yourself any red chillies at the supermarket and start by mixing a well-chopped chilli with honey and leave overnight to get the base of a start to the perfect hot honey.
My suggestion is to take some of the flakes out of the chillies you are using (maybe half and half). The trick is to balance heat and flavour. Taking out the flakes will soften the heat and intensify the chilli flavour. So it could be that you like one without any flakes at all.
Frankly, I am leaning towards that. So you have lots of red skin in the honey, which looks amazing and gives it that nice kick without overwhelming the dressing.
